Easy Breakfast Ideas

I have subscribed to the theory that I do not need breakfast because I can drink coffee until about 11 am and not really feel hungry, so why force the extra calories. That doesn’t work for me anymore.

Sharing two easy cheap breakfast ideas here. I’m calling them the Chow-cuterie Plate and Granola “Yogurt”.

The Chow-cuterie Plate is my take on fancy plates, but focusing on Indigenous foods and leftovers. Cranberries, pumpkin seeds, one apple and a slice of leftover gluten free vegan cornbread. Good fuel. Cheap. Fancy on on my grandma’s “good” dishes she rarely used. I have half a glass of carrot juice with it. It will shock you, but once you cut most sugar out, vegetable juices become “sweet” after your taste buds recover. We’ll tall about “juicing” in later posts.

If you miss dairy, you can also find good plant-based yogurt substitutes at Reasor’s in Tahlequah like this one. I don’t eat them much because it’s not something I crave, but when I do, I add gluten free granola that I find on sale. I like a good clearance item and crunchy things. A complete meal. We never ate yogurt growing up except for a few times at TCBY at Curt’s Mall in Muskogee and that’s not the kind of yogurt we are talking about here.
