Apple Sauce = Eggs

Use plain apple sauce instead of eggs when you make pancakes, waffles, muffins, or pretty much anything that calls for eggs. Get the generic jar with no added sugar, cheapest brand you can find. I find that about 1/3 to 1/2 cup of apple sauce = 1 large egg. It binds everything perfectly for cooking. You’ll never know. One large egg contains 186 mg of cholesterol. A whole bucket of Apple Sauce contains zero mg of cholesterol.
