Bye 2020, ‘Siyo BlackEyed Peas
Happy New Year 2021. Why take a chance? Just eat the dang BlackEyed Peas (BEPs). If you are from anywhere near the American South, you’ll understand that if you don’t eat the BEP, you are not guaranteed luck in the new year. For a more description and recipe for BEPs, check out Imma at Immaculate Bites as she does ethnic fusion made easy. In addition to Indigenous authors, we’ll try to highlight BIPOC blogs and authors. She’s got the BlackEyedPeas recipe with the meats and the greens. For a plant-based option, I went with BEP Hummus/Avocado Tacos on Corn Tortillas. They had the taste and texture of a fish taco with a dash of good luck for 2021.
BlackEyed Pea Hummus/Avocado Tacos on Corn Tortillas Recipe
Put one can of BEP drained, one avocado, 1/4 cup of Tahini, salt and pepper, the juice of one lemon or lime, 1/4 cup of garlic in a blender or vitamix - this will yield a nice cereal size bowl of hummus-like goodness. Smear it on thick to a corn tortilla as the base. Then the inside of the taco can be whatever you want. I went with a crunchy extra firm tofu cut into strips, pan seared in sesame and hot chili oil along with crushed pumpkin seeds. Top with salsa, a dash of plant-based “cheese”, veggies, slaw, you name it.
We’ll discuss tofu soon - I really hated it until recently. I don’t eat it often, but it’s growing on me. We’ll also discuss plant-based “cheese” and other things you might need to make the switch.
