Big Salads
A salad a day, most days. There’s no limitation to what you put in it. Make it big. Put it in a pretty plate. It’s got to be a staple in any healthy diet.
My typical salad is pictured above: mixed lettuce, spinach, cranberries, other berries, sunflower seeds or sliced almonds, broccoli slaw (I don’t like actual broccoli so this is a way to get it in), shredded red cabbage. There’s no wrong answer. Toss it in some kind of oil based mixture: balsamic, lemon, etc. ranch dressing is not it’s own side dish. Walk away from that.
My dad remembers his grandmother taking a big bowl and going out to forage. He marveled at how she could go out to a ditch and return with a salad. Wish I had that knowledge.
Happy salad chomping. If you can’t make a whole meal out of it, throw in more stuff.
